Instant Pot Pork Carnitas

Weeknight Pork Carnitas are now a thing when you cook up the pork in your pressure cooker or Instant Pot! A dish that normally needs hours of slow roasting can be completed and on the table in just over an hour. Inspired by the Splendid Table’s recipe, I made some this week to see how well it works for myself. I did, of course, take some liberties with the recipe and added some of my own ingredients: garlic, jalapeño pepper, Slap Ya Mama Seasoning and my own secret seasoning mix, Who’s Yer Daddy. After releasing the pressure and shredding the meat, I placed the carnitas under the broiler for just a couple minutes to get those crispy edges we all love in our carnitas.

I topped the carnitas with lettuce, cilantro, radish slices, diced jalapeño, scallions, spicy sour cream, and fresh lime juice. I served them with a side of rice and beans and it was perfection. The only thing I would change…I had only bought a 2 pound piece of pork shoulder. Next time I would triple the batch for more leftovers!
