Cardamom Cinnamon Knots

OH My GOODNESS! When I saw this Glazed Cinnamon-Cardamom Buns recipe from Epicurious, I knew I had to make this RIGHT NOW! Not only do they look gorgeous, they are a blast to make and they taste divine!

This is one project that if you have children you must try with them…they will have so much fun twisting and knotting these and don’t worry if they don’t come out perfectly, they will still taste incredible!

If cardamom is not your thing, you could skip it, but it adds a great flavor with the cinnamon and makes the buns taste more exotic. NOTE that this is a two day project…in order to get the best flavor the dough must rest in the refrigerator overnight before you roll it out, cut and shape for the final proof. And you want the dough cold and the filling prepped before you begin rolling, because you need to work fairly quickly once you start rolling, cutting and shaping due to the amount of butter in the dough…yes, I said butter….best to use the best Wisconsin butter you can find!

 

 

First you roll the dough out into a rectangle…doesn’t have to be perfect but as close as possible to a 16″x12″ about 1/4″ thick. Next you spread the filling over 2/3 of the dough, then fold like a letter, first folding the side with no filling over the middle section, then fold the remaining section over the middle. Then you roll out the folded dough into a rectangle about 12″x8″ 1/2″ thick. Next you cut the dough into 8 long strips. I used my pizza cutter for this, cutting first down the middle, then cutting each half in half once again, then repeating with each quarter. That way I got fairly even strips without having to measure anything. Now for the fun, twist each strip into a pretty tight twizzle, then wrap around three fingers twice, slip though to knot, then wrap again and knot again…they won’t all look alike especially if the kids are helping, but who cares…they will all taste great! After the final proof and bake you glaze them and gobble them up. WARNING: this recipe only makes eight rolls…best to double it right off so you can enjoy them longer! This one’s a keeper!

Looks delicious! I don’t think I’ve tried Cardamom before, so I’m interested to see what it tastes like. This looks like a recipe I will share with my sisters when I visit them next week because they love to bake! And they can do it together with my girls. Hopefully they turn out as beautiful & delicious as yours!
